Healthy + Tasty = Happy Tummy
Last night I blogged about how I made a very delicious dinner, something my hungry man-friend gobbled up ravenously, and even had a second helping of. This is only a shock, as the main ingredient was tofu. So anyway, as I secretly fancy myself one day becoming the next Jamie Oliver; cookbook writer and foodie-extraordinaire, here is my wee recipe.
Fried Rice with Veges and Tofu
What you’ll need
*Left over rice, about 3/4 cup per person (preferably cooked the night before)
*Firm tofu, cubed and marinated in soy sauce and sesame oil
*1 onion, sliced
*1 bunch of asparagus, sliced
*1 courgette, sliced
*1-2 cobs of corn, steamed, and then the corn removed from the cob
*frozen peas (as many as you like)
*Black pepper, soy sauce, sweet chilli sauce, olive oil, sesame oil
What you do
*Put cubed and marinated tofu into a baking dish, and bake for about 35-40 minutes in the oven at 180 degrees, turning once
*Fry sliced onion in a little olive oil, sprinkle some salt over frying onion to bring out the sweetness
*Add asparagus and courgette to onion, add a dash of soy sauce, a splash of sweet chilli sauce, and some black pepper, fry about 5 minutes
*Throw in the corn and peas
*Take veges out of the pan and add to tofu (which has been baked and is just hanging around waiting now)
*Into the same pan, put a little butter, olive oil and soy sauce
*Chuck in all the rice, and let fry for a couple of minutes
*Try and ‘flip’ the rice over (very hard, I normally end up just mixing it around). But you basically want to get it nice and fried on all surfaces. Once the rice has fried for about 5 or 6 minutes it’s probably done, so take it out and add it to the veges and tofu.
*Voila! A delicious and healthy dinner. And a very happy tummy.
