Best Recipe: Italian Lentil Soup (My Version)

Here’s a super quick and easy recipe for hearty, healthy and delicious Lentil Soup. It’s a perfect Sunday night dinner and makes a great lunch at work! Keeps you full all afternoon, and hits the spot rather nicely…

What you’ll need:

*1 1/2 cups brown lentils

*1 onion

*1 carrot

*2 tomatoes

*3 potatoes (medium size)

*2 cloves of garlic

*couple of stock cubes – I used beef stock (but a vegetarian one)

*1 tablespoon of tomato paste

*salt and pepper to taste

So first off you need to rinse your lentils. Basically just wash them in water and then drain them. Then add your water – double the amount of lentils and half again. My recipe makes about 6 large servings. So 1.5 cups of lentils = 4.5 cups of water. Then you just need to chop all your veges, and combine ALL ingredients in the pot! That’s it! Cook on a low simmer for about 45 minutes (that’s about how long it will take the lentils to cook) and then switch off the heat, taste, add any seasoning necessary, and voila! Yummy, healthy, lentil soup.
